Crunchy Sweet Potato Breakfast Squares
makes 12 squares @ 105 cal/ea.– 50 minutes

3 large sweet potatoes
4 egg
2 tsp salt
2 tsp honey or agave
4 tsp cinnamon

Preheat oven to 400ºF.

** Unless you have an industrial size kitchen, you’ll likely want to do these in two batches**

Grate (on a cheese grater) or shred the sweet potato.

In a large mixing bowl, combine all ingredients and channel your playdough-packing-childhood skills.

Form into squares and make as tight as possible. Lay on a cookie sheet (ungreased)

Bake for 25 minutes.

Flip.

Bake another 15 – 20 minutes.

Let cool for at least 20 minutes, and then package up for freezing!
