I had no idea this was a Philly area thing, as I’ve seen most other recipe bloggers say as well when posting their versions. If you grew up in southeastern PA though, and you had a homeroom mom with a domestic mission, then you grew up making these every March. There are two ways to make these: one involves peanut butter, one involves cream cheese, and both involve a crapton of sugar. This is a combination of both and strictly paleo.
1/4 cup Stevia (double the honey if you don’t do stevia)
1/4 cup honey
1 cup unsweetened shredded coconut
1/4 cup almond milk
1/3 cup cinnamon (roughly)
Bake your potato.
(Crash Course in potato baking: Poke holes in potato with fork. Option 1 – oven @ 350F for one hour. Option 2 – mic on high for 5 minutes, flip, mic on high another five minutes. Guess which one I did…)
Mash potato with a fork and add in almond milk.
Mash in Stevia and honey, and finally the coconut.
Roll into little balls – the lumpier the better because they’re supposed to look like awkward potatoes.
Add cinnamon to a separate bowl and roll the balls around in the cinnamon (individually) until fully coated. Tada! You’ve just added the skin to your lil potato friend!
Store in fridge until ready to serve. Definitely share – and then raise your family in the greater Philadelphia area.
